    A massive Thanks to Paul from Monolith for sharing his recipie with us!

    Previously I've baked a whole Camembert directly on the charcoal and served with garlic bread but what makes this baked Camembert with cranberry sauce different is that I've taken the top off the cheese and baked it indirectly which adds a wonderful yellowy colour to the presentation. Made using cow's milk, Camembert is a soft white French cheese encased in a white crust. You need the Camembert to be ripe for this

    INGREDIENTS

    600g raisins
    200g currants
    100g dried sour cherries
    250g mixed dried fruits
    400ml Brandy, plus extra to feed the cake
    300g butter, at room temperature
    150g ground almonds
    150g almonds, chopped
    200g dark brown sugar
    1 lemon
    4 eggs at room temperature
    3 tbsp treacle
    300g plain flour
    Half teaspoon ground ginger
    1 tsp ground cinnamon
